White wine sauce

Ingredients

5 shallots roughly sliced
120g butter
6 garlic chopped
10tbls flour
800ml whine wine
1200ml chicken stock
500g cream
1tbls pepper
1tbls salt

Method

Sweat shallots in butter
Add garlic to cook.
Stir in flour and cook off.
Stir in white wine and reduce 1/3
Add chicken stock and cook for 5 min
Stir in cream and cook 5 min
Add salt & pepper

Fine strain to finish
